Baked fish balls

Serves 6

Ingredients

900g fresh salmon fillets 
1/2 teaspoon low sodium salt 
1 1/2 tablespoons olive oil
2 tablespoons fat free thick Greek yoghurt
1/4 cup flour  
1/4 cup low fat crème fraîche

Instructions

Preheat the oven to 180°C.

Brush a baking tray with 1/2 tablespoon of olive oil.

Grind or chop the fish very fine in a large bowl and add the salt and pepper. 

Cream the remaining oil, yoghurt and flour together in a small bowl.  

Add the flour mixture into the fish. 

Beat until very smooth and stir in the crème fraîche. 

Shape into one-inch balls.  

Bake in the oven for 40 minutes.
