Fried soup noodles
1 cup flour
1/4 teaspoon low sodium salt
Low fat vegetable oil spray for frying
In a large bowl, mix the salt and flour and make a well in the centre of the mixture.
Break the egg into the well.
Gradually mix the egg into the flour and knead until smooth and elastic.
Cover with a bowl for 20 minutes.
Pick up the dough and roll out as thin as possible on a lightly floured surface.
Stretch the dough gently until it becomes thinner.
Let the dough dry on the lightly floured surface for 20 minutes.
Fold the dough in half.
Cut the dough into circles with a small melon-ball cutter.
Heat the cooking spray in a nonstick pan on a high heat.
Drop the dough rounds into the pan.
Fry until lightly browned.
Place on a plate once cooked and serve in soup.
