3 cups grated, drained potatoes
1/3 cup potato flour
1/2 teaspoon baking powder
1 teaspoon low sodium salt
1/8 teaspoon pepper
3 tablespoons grated onion
1 tablespoon plus 1 teaspoon olive oil
Preheat the oven to 175°C.
Brush a baking dish with one teaspoon olive oil.
In a large bowl, beat the eggs well.
Mix the potatoes, potato flour, baking powder, salt, pepper, onion and the remaining oil into the eggs.
Gently pour the mixture into the baking dish.
Bake in the oven until browned, about 50 minutes.
