2 cups plain flour
1 tablespoon water
1/2 teaspoon low sodium salt
Place the flour on a board and make a well in the centre.
Break the eggs into the well, adding the water and salt into the eggs.
Beat the eggs lightly with a fork.
Gradually work the eggs into the flour.
Knead the dough until smooth and elastic.
Roll and stretch the dough as thin as possible.
Let the rolled dough stand until it's just dry to the touch.
Roll the dough up like a jelly roll and cut as thin or as thick as you like.
Pick the noodles up and shake them until they separate.
Place the noodles on a lightly floured surface or pasta drying rack and let them dry completely.
Keep the noodles in an airtight container until you want to use them.
To cook the noodles
Cook in boiling salted water or soup for about 10 minutes.
